Side Dish ~ Cajun Roasted Chickpeas

These are a tasty snack that can be a wonderful substitute for popcorn.  They are like corn nuts, but softer…and addicting when warm, straight out of the oven.

2 cans chickpeas, also known as garbanzo beans
1 tablespoon canola oil
2-1/2 teaspoons Cajun Seasoning
a few grinds of the salt mill, to taste

Drain and rinse chickpeas.  Place flat in large dish with paper towels above and below to absorb the liquid.  Let sit out for about 3 hours to dry.

Preheat oven to 400 degrees Fahrenheit.  Line a baking sheet with aluminum foil, then coat with the canola oil,  Add the dry chickpeas on top and shake the baking sheet back and forth until the chickpeas are all coated with oil. Evenly sprinkle the Cajun Seasoning over the chickpeas, add a few grinds of the salt mill, and shake/stir the pan to coat. Roast for 40 to 50 minutes. Every 10 minutes, open the oven door and shake the pan to evenly distribute the chickpeas.
